Sukeroku sushi (Inari sushi&sushi roll)


<Basic information>

<Ingredient&Amount>

110g rice
1g black sesame
1g white sesame

<Deep fried bean curd for Inari>
1 deep fried bean curd
●4g sugar
●4g soy sauce
●40g broth

<Combined vinegar>
★14g sugar
★26g vinegar
★1g salt

<Ingredient for sushi roll>
5g(Soy bean, coagulant, saleratus)freezed dried bean curd
◆3g sugar
◆3g soy sauce
◆50cc broth
20g cucumber
2g dried shiitake mushroom slice
▲2g sugar
▲2.5g soy sauce
20g baked eel or anago (If any)
1g cooked dried lavar seaweed

<Japanese omelette>
20g egg
5cc broth
2g sugar
0.3g salt
1g oil

 

<Directions>

1. Pull hot water on deep fried bean curd quickly, cut in half, open inside and boil with seasoners (●).

2. Put seasoners for vinegared rice (★) in a pan, boil them and make combined vinegar. Pull them on cooked rice circularly and make vinegared rice.
For a half of vinegared rice, mix with black sesame and use for inari sushi.
For the other half of rice, mix with white rice and use for sushi roll.

3. Prepare ingredients for sushi roll. Cut cucumber into quarters crisscrossly.

4. Put freezed dried bean curd in water, drain off water and cut into quarters crisscrossly.
Put seasoners (◆) in a pan, line cut freezed dried bean curd and turn on the heat.
Drop a lid, boil on medium heat until the broth reduces to the half of the beginning and cool it down.

5. Put dried shiitake mushroom to cover all in water, add its juice and seasoners(▲) to it and turn on the heat. Drop a lid, boil on medium heat and cool down the pan.

6. Make Japanese omelette. Mix egg, broth, sugar and salt and cook in a fry pan after putting oil.
After cool down the omelette, cut in quarters crisscrossly.

7. Put rice mixed with black seame into deep fried bean curd 1. and ready to serve inari sushi.

8. Put lavar seaweed on a rolling mat, and put vinegared 4. and line prepared ingredients.
Roll from the edge such as grasping tightly, cut into bite size pieces and ready to serve sushi rolls.

<Cooking point>

If deep fried bean curd does not open, please avarage by a rolling pin etc.
Please boil freezed dried bean curd with seasoners liquid for sure.
If you add a pinch or sugar to dried shiitake mushroom in water, you can make the time shorter.
Roll simmered ingredients after cool all of them down. If you do not cool them down, it gets damaged easily.
