Simmered mackerel with miso
<Basic information>
・Serving size:4 people

<Ingredient&Amount>
・2 slice mackerel
・1 cup water (200cc water)
・2 big spoon sugar
・1 big spoon sweet rice cooking wine (halal certified)
・1/2 big spoon soy sauce
・3 big spoon miso
・4 slices ginger
*1 big spoon: 15cc / 15g
<Direction>
1. Wash blood of mackerel by water and cut in half. Make cuts in skin of mackerel.
2. Put mackerel into a bowl, pour hot water in both sides, make them white and cool them down.
Drain water of mackerel off by a kitchen paper towel.
Please take care since contents tend to scramble.
3. Put water, sugar, sweet rice cooking wine and soy sauce into a pan and boil in medium heat.
Once it gets simmered, put 2. with a skin side up and ginger.
Add broth from above around and solidify the surface of mackerel.
Skim the scum, make a drop lid and boil in medium heat for 7-8 minutes.
4. Remove a drop lid, put beating miso, and boil for 5 minutes not to burn in a pan.
Once broth get thick, ready to serve.
<Cooking point>
・Since we cannot use Japanese sake, please make sure to prepare direction 1. and 2. to remove mackerel smell.
Also, ginger takes a function to remove smell.
